Polynesian Chicken

2 tbsp (30 mL) Spectrum® Organic Canola Oil
1 lb (500 g) boneless, skinless chicken *, cut into bite-size pieces
Salt and pepper
1 ½ cups (375 mL) chopped onion
1 ½ cups (375 mL) chopped sweet red pepper (1 inch (2.5 cm) pieces)
1 clove garlic, minced
2 cups (500 mL) Europe’s Best® Fruit EssentialTM Tropical Fruit and Coconut blend, thawed and drained
3 tbsp (45 mL) granulated sugar
1 tbsp (15 mL) cornstarch
3/4 tsp (4 mL) ground ginger
1 cup (500 mL) Imagine® Organic Chicken or Organic Vegetable Broth
1/2 cup (125 mL) snow peas
1/4 cup (50 mL) apple cider vinegar
1 tbsp (15 mL) naturally brewed soy sauce
1/4 cup (50 mL) thinly sliced green onion



  1. In a large non-stick skillet over medium-high heat, heat 1 tbsp (15 mL) of the oil. Add chicken; cook until lightly browned, stirring often. Season with salt and pepper. Remove from pan using slotted spoon. Cover to keep warm.
  2. Reduce heat to medium. Add remaining oil and onion to pan; cook for about 6 minutes, until onion is soft. Add peppers and garlic; cook 3 minutes, stirring often.
  3. Return chicken to pan, including any juices. Stir in fruit.
  4. In a small bowl, mix together sugar, cornstarch and ginger. Whisk into broth; stir broth into chicken mixture. Stir in snow peas, vinegar and soy sauce. Cook, stirring, until sauce thickens, about 3 minutes.
  5. Top with green onion. Serve with jasmine rice.
